Clear JelĀ® is a modified food starch made from corn. It works and measures the same as cornstarch, but gives foods a more pleasing texture that doesn't crack or sweat as it cools. Like other heat-activated thickeners, non-instant Clear Jel thickens gradually during heating, and reaches maximum thickness when it cools. Recommended for home canning by the USDA. Not recommended for freezing.
