Small white beans, also called navy beans, are the most popular beans in the U.S. They are the beans most commonly used in pork & beans, baked beans, and bean soups. They may also be used in salads, or even mashed into a paste and used in desserts! Small white beans are particularly high in protein and dietary fiber.
Cooking directions: Rinse 1 cup navy beans, add 3 cups cold water, and let soak overnight. Drain and add 3 cups fresh water. In a large pot, bring beans to a boil and let boil for 1 minute. Skim off and discard any foam that forms on the surface of the water. Reduce heat to medium-low, cover, and simmer for 60 to 90 minutes or until tender.
