Lentils were one of the first domesticated crops, and have been part of the human diet for thousands of years. Lentils are one of the best plant sources of protein. They cook more quickly than other legumes, and are often combined with rice. The flavor of lentils goes especially well with chicken or pork. Lentil soup is flavorful, inexpensive, and highly nutritious. Lentils are also popular for sprouting.
Lentils do not require pre-soaking before cooking. Do not add salt to the cooking water, as it can toughen the lentils. Acidic ingredients such as tomatoes can lengthen the cooking time. Add these ingredients after the lentils are tender.
Cooking instructions: Rinse lentils and drain. Add enough water to cover lentils, and bring to a boil. Boil for 3 minutes, then reduce heat to medium-low and simmer until tender. Fresh lentils will cook in about 10-15 minutes. Cooking time increases with the age of the lentils. Lentils that have been stored for several years may take as long as an hour to cook. For best results, cook the lentils by themselves before adding other ingredients.
