Great Northern beans are large white beans with a very delicate nutty flavor. They are very good at absorbing flavors from other ingredients. This makes them especially useful for dishes such as baked beans and cassoulet. They hold their shape well when cooked, which makes them one of the best white beans for salads. They are especially good when used in tomato or ham based dishes.
Cooking Directions: Soak 1 cup great northern beans in 3 cups cold water overnight. Drain and discard the soaking water. Add 3 cups fresh water and bring to a boil. Reduce heat to medium-low. Cover and simmer gently, adding water as necessary to keep the beans covered, for 1½-2 hours or until tender.
