Smaller than regular lima beans, baby limas have a creamy, almost sweet flavor. They taste great in soups, casseroles, and mixed vegetable dishes. Baby limas go especially well with cornbread or rice.
Cooking instructions: Soak 1 cup baby lima beans in 4 cups of water overnight. Drain and rinse the beans. Add 4 cups fresh water or broth, and heat to boiling over medium heat. Skim off any foam that may develop on the surface of the water. Cover and reduce heat to medium-low. Simmer for 60 to 90 minutes, or until beans are tender enough to mash with a fork, stirring occasionally and adding more water if needed.
